Nowadays, there is a strong tendency to functional foods, due that the people are showing a great interest in their nutrition, preferring less processed, nutritious and healthier food, that provides benefits to their physical and mental health. As a result, there has been an increase in the industry in developing functional foods, that satisfies the likes and necessities of the consumer. In addition, the value and importance of products and foods that represents the country has been increasing. Therefore, the aim of this project was to formulate functional ice creams of guava, borojo and banana passionfruit, with a high antioxidant capacity provided by the fruit. Firstly, it was determined by a bibliographic research the antioxidant capacity and phenolic content of each fruit, to establish which of the fruits provides higher nutritional benefits. Afterwards, 6 different samples of ice cream were made, 2 for each fruit based on the type of the milk (cow or coconut). Measuring the overrun, melting time and carrying out a sensitive analysis, nutrition fact tables of the products and a business model. It was established that the ice creams with a greater contribution of bioactive compounds, greater global acceptability and purchase intention and low caloric content, are the ones made from banana passion fruit and guava. Also, it was concluded that the type of milk is the variable that affects significantly the overrun, as well as the fruit and type of milk affects the melting time.

Hoy en día, se ha visto una fuerte tendencia hacia los alimentos funcionales, dado que las personas están mostrando un mayor interés en su alimentación, prefiriendo alimentos menos procesados, nutritivos y más saludables, que aporten beneficios a su bienestar físico y mental. Por esta razón, se ha incrementado el desarrollo de alimentos funcionales en la industria que beneficien la salud y satisfagan el gusto y necesidad del consumidor. Además, en la actualidad ha crecido el valor e importancia a productos y alimentos que representen al país. Dado lo anterior, el objetivo del proyecto fue formular helados funcionales de guayaba, borojó y curuba, con una alta capacidad antioxidante y contenido fenólico aportada por la fruta. En primera instancia se determinaron la capacidad antioxidante y contenido fenólico de cada fruta dada una revisión bibliográfica, para así determinar cuál de ellas aporta más beneficios nutricionales. Luego se realizaron 6 muestras de helados, 2 por cada fruta usando en cada muestra un tipo de leche diferente (vaca y coco). A partir de los productos, se determinó el porcentaje de overrun, tiempo de derretimiento, tablas nutricionales y se realizó un análisis de sensibilidad y un modelo de negocio. De allí, se estableció que los helados con un mayor aporte de compuestos bioactivos a la salud, mayor aceptabilidad global e intensión de compra y bajo contenido calórico, son los de curuba y guayaba, siendo estos los productos base para la construcción del modelo de negocio. Además, se concluyó estadísticamente que el tipo de leche es la variable que afecta significativamente el overrun y el tipo de fruta y leche afecta el porcentaje de derretimiento.
